Pork booty with honey, mustard, orange and potatoes

A very tasty roast that will impress and pleasantly surprise your guests. Let me tell you that Cypriot pork is not only the most delicious meat we have but also the most economical. The secret to success is the low temperature during baking so that the meat is soft. Ask your butcher to leave enough skin on the boot you buy. Also, choose a piece whose bone will look and protrude for a more delicious result and a more impressive presentation.

  • 1 pork whole pork with skin, about 3 kg
  • 2 sprigs of rosemary
Salve for the Booty
  • 40 gr. honey
  • 30 ml balsamic vinegar
  • 40 gr. mustard
  • peel zest of 2 oranges
  • peel zest of 1 lemon
  • 2 teaspoons of salt
  • ½ teaspoon pepper
      For potatoes
    • 1½ kg of small potatoes cleaned and cut into large pieces (oven potato size)
    • 1 teaspoon of garlic melted
    • juice of 2 oranges
    • juice of 1 lemon
    • 90 ml of olive oil
    • 50 gr. mustard
    • 2 teaspoons of salt
    • ½ teaspoon pepper


      Implementation
    • 1. Remove the booty from the refrigerator and allow to take room temperature for at least 1 hour. Put it in a baking tray and chop the fat surface with a sharp knife.
    • 2. Sprinkle the booty with the salve very well and place the rosemary sprigs on top.
    • 3. Cover with oilpaper and seal it well with foil. Bake in a preheated oven at 180 degrees for 2 hours and 30 minutes.
    • 4. Put the potatoes in a bowl. Add all other ingredients and mix. Unroll the booty and add the potatoes with all the liquids. Reduce the oven to 170ºC, recover again and continue baking for 2 hours and 30 minutes.
    • 5. In the last half hour of baking, we unravel the pan and bake the food uncovered to dry the skin and the potatoes melt.
